What You’ll Need:
1 cup Pearl couscous (or quinoa)
2 medium sized beets
1 tbsp. Fresh Mint, minced
1 tbsp. Flat leaf parsley, minced
2 Tbsp. olive oil
1-2 Tbsp. white balsamic vinegar
¼ cup chopped walnuts
Bibb lettuce leaves
Salt to taste
How To Do It:
Gather all ingredients.
Preheat oven to 400 degrees.
Wrap beets in aluminum foil and roast in oven for 40 minutes.
When done peel the beets then dice into bite sized pieces.
Alternatively: Use precooked beets form the refrigerator section of your local market.
Cook pearl couscous according to package. Drain.
Mix first 6 ingredients together in a bowl.
Place Bibb lettuce on 2-4 small plates
Top with salad and garnish with walnuts
Note: I like the texture of the pearl couscous. The red color of the beets bleeds a little onto the couscous giving it a pretty pink hue.
