Makes: 4 dozen
What You’ll Need
1 cup sugar
1 cup stevia
1 cup butter
8 oz. part-skim ricotta cheese
2 cups almond flour ( all-purpose is fine, too)
2 large eggs or (vegan egg – this will alter the flavor)
2 tsp. baking powder
1 tsp. salt
3 tbsp. almond milk
2 tsp vanilla extract
½ cup powdered sugar and ½ cup powdered stevia
How to Do It:
Gather all ingredients
In an electric mixer beat sugar and butter on high until it is light and fluffy- 5 minutes.
In a separate bowl combine the flour, baking powder, and salt.
Set mixer on medium and add ricotta, vanilla, and eggs. Mix until combined.
Turn mixer to low. In ½ cup increments add flour and mix until dough forms.
Remove bowl from mixer, cover with plastic and refrigerate 1 hour.
Preheat oven to 350 degrees. Remove from refrigerator.
Place parchment paper onto a baking pan(s).
Lightly flour your hands, roll the dough into 1 ½ inch balls
Place on parchment about 2 inches apart
Bake 12-15 minutes until lightly golden on top. Cool for 30 minutes
Mix all ingredients together.
Using a pastry brush spread on cookies and top with sprinkles.
